VINIFICATION INTEGRALE – BARREL FERMENTATION

Vinification Integrale Barrel  

An Australian First!
The Robertson of Clare Wines MAX V has become the first wine in Australia to use the 'Vinification Integrale' system. Developed by Tonnellerie Baron this unique system allows crushed grapes to be inserted into the oak wine barrel for maceration and primary fermentation, along with the more common red winemaking barrel practices of malolactic fermentation and maturation. The Baron Cooperage, one of the oldest cooperages from Charente, was established in 1875 by Henry Baron. Located in the heart of the Cognac region, its workshop has a long history of supplying the famous Cognac Houses and the Grands Châteaux of the Bordeaux vineyards. Full story

SEGUIN MOREAU

Seguin Moreau was the first cooper to decide to improve on centuries of empirical know-how by calling on the methods and tools used in scientific research. Signed in 1983, and later consolidated with the funding of full-time researchers, Seguin Moreau's partnership with the Bordeaux Faculty of Oenology has succeeded in shedding new light on the interactions between wood and wine.
